Every December, we look forward to two specific things: spending Christmas with family, and making and eating peanut butter balls.
As a family of people where almost everyone has a sweet tooth, desserts are an extremely big part of the holiday. From ice cream to cake, no dessert is out of the picture.
Though it might not seem like much, a peanut butter ball represents a combination of extensive preparation for my family and an overwhelming excitement to eat them. The savory peanut butter-rice krispy layer under the sweet almond bark brings a perfect thickness to each and every bite.
The peanut butter ball tradition started only a few years ago, but has already become a timeless classic in my family that. The first batch hardly lasts the week, especially since the best way to eat them is not just by yourself, but by sharing them with other people like friends or holiday gifts to your teachers, even though sharing as hard with a treat as good as these.
I remember as a kid both the smiles of my family and friends as baked goods were shared with each other. Then of course, leaving some out for Santa on Christmas Eve, only for them only to be gone in the morning.
Among all the good moments, Christmas evening was always the best time for this sweet treat. Though you might gorge yourself on an extensive Christmas dinner of perfectly baked ham, golden mac and cheese, and warm mashed potatoes, there is always room left for dessert. Along with a warm cup of hot chocolate, peanut butter balls are the perfect after-dinner sweet and savory treat.
For me and the rest of my family, peanut butter balls bring back sweet memories and the even sweeter taste of years of good Christmases and cheerful moments.
Ingredients:
- 2 c. peanut butter (18 oz.)
- 1 stick butter
- 1 cup Powdered sugar
- 3 c. Rice Krispies
- Almond Bark
Instructions:
- Melt peanut butter and butter over low heat. Mix until uniform.
- Take off the heat and then rice krispies then the powdered sugar
- Mix all ingredients by hand
- The mixture is too gooey to form into balls immediately. Let it cool in the frig for
- an hour or two.
- Grab a spoonful and roll each into a ball.
- Melt the almond bark.
- Dip your peanut balls into almonds and tap off excess.
- Place on wax paper or foil.
