During the holidays, or on random occasions, my Mimi always bakes our family these amazing peanut butter cookies with a recipe passed down through generations.
The peanut butter cookies are one of if not the most popular recipes that has been passed down in my family. The recipe originated from Betty Crocker’s Picture Cook Book first edition owned by my great-grandmother in 1951. The cookbook contains many recipes my family has used and been passed on for a few generations.
My grandmother and I love making these during the holidays. When I was very young I remember going over to her house and staying in the kitchen with her, helping make the batter and then helping put them on the cookie sheet.
This recipe has become a part of our family’s heritage, being the recipe that we use the most. Everybody in our family has always loved this recipe, my great-grandmother baked it for her kids, and my Mimi still bakes it for our family now.
This peanut butter cookie recipe uses the most simple list of ingredients but always comes out tasting amazing. They have the perfect mix of flavors, and most importantly, the perfect taste of peanut butter. They are rich, creamy, and soft. Allowing it to be the perfect treat to enjoy on any day, be it over the holidays or a random rainy day on the weekends.
This recipe is a very simple bake, it does not take long to make the batter, to chill, and to actually bake the cookies themselves. At max, the entire recipe takes just about an hour to complete, making it a quick and easy bake.
Ingredients
- ½ Cup of butter
- ½ cup of peanut butter
- ½ cup of sugar
- ½ cup of brown sugar
- 1 egg
- 1 ¼ cup of sifted flour
- ½ tsp. Baking powder
- ¾. Tsp. Baking soda
- ¼ tsp. Salt
Instructions
- Mix all ingredients with either a whisk or an electric mixer until fully mixed.
- After making the dough, cover with foil and chill it in the fridge for 40 minutes.
- After chilling, roll the dough into balls the size of large walnuts.
- Place each ball 3 inches apart on a lightly greased baking sheet.
- Then flatten the dough with a fork dipped in flour, pressing down crisscrossed every time you push down with the fork.
- Put into the oven at 375 F and bake for 10 to 12 minutes.
- Then let cool on separate pan for 5 minutes
